Vicious Biscuit’s Growing Presence

The upcoming Columbia location is part of Vicious Biscuit’s expansion journey, marking a significant milestone for the restaurant’s co-founder and CEO, George McLaughlin. As a native of Columbia, this launch represents a sentimental homecoming for McLaughlin, who began his flourishing career as a restaurant developer in this city. He identifies the vibrant energy and culture of Columbia as a perfect fit for Vicious Biscuit’s brand identity.

Unique Breakfast Creations and Endearing Service

The 3,250 square-foot location will serve guests from 7 a.m. to 3 p.m. Monday through Friday, and on weekends from 8 a.m. to 3 p.m. The culinary core of Vicious Biscuit revolves around their signature biscuits, pairing brunch traditions with innovative twists. The all-day-delicious menu features freshly baked biscuits filled with a range of ingredients spanning from crispy fried chicken and maple sausage gravy to a variation of huevos rancheros. Patrons can also opt for healthier dishes like the oatmeal power bowl and keto bowl. A “Jam Bar” featuring custom fruit jams and house-made butters add enticing accompaniments to the meal options.

A Celebrated Homecoming for the Founder

The upswing of Vicious Biscuit’s Columbia launch holds a special place for McLaughlin. It was here that he opened his first franchise of McAlister’s Deli in 2004, setting the ground for his career in restaurant development. Over two decades later, the same spot will welcome the new Vicious Biscuit, making this venture a full-circle journey for McLaughlin.
