Meet the New Chief Operating Officer
First up is Lori Hilyer, the new Chief Operating Officer of Taco Boy. Hilyer, hailing from Asheville, North Carolina, brings a wealth of experience to the table. She has been instrumental in the success of Taco Boy’s North Carolina locations over the past few months. Interestingly, her journey with Taco Boy started long before stepping into this role. Hilyer and her family were frequent visitors to the Folly Beach location, and her passion for the brand only grew stronger after visiting the West Asheville spot.
It was during this visit that Hilyer struck up a delightful conversation with Karalee Fallert, Taco Boy’s founder and CEO. That chat led to a connection that ultimately pulled Hilyer into Taco Boy’s leadership family. With over 30 years of experience in both independent and corporate hospitality, she is excited to oversee operations across all Taco Boy locations in the Carolinas.
“I’m beyond excited to be a part of Taco Boy’s future. The people here are truly incredible, and I can’t wait to help the team continue providing positive experiences to our guests,” Hilyer shared. Welcoming Back Rachael Rose
Alongside Hilyer, Taco Boy has also welcomed back Rachael Rose, who will be steering the off-site catering and in-house events program. Rose isn’t new to Taco Boy; she previously worked there for four years before taking a break to focus on her family and lend her talents to a national hospitality startup’s marketing department.
With over 22 years of industry experience, Rose’s expertise has always been centered around sales, event planning, and food and beverage operations. In her new role, she’s already hit the ground running by relaunching and expanding Taco Boy’s off-site catering services and in-house events, which the community can’t wait to see unfold.
“I love making people’s dream events a reality and handling the details so they can enjoy the party stress-free,” Rose expressed her enthusiasm. She is genuinely thrilled about the potential to continue elevating Taco Boy’s catering, community engagement, and events.
