She started her business in 2020 when the pandemic put her career in food and beverages on hold, and now she has turned that pause into a thriving local enterprise.

From the Pandemic to Plates

Funderburk’s love for charcuterie boards blossomed when she realized there weren’t many options for delivery. “We missed our ritual of dining out and experiencing those great food boards,” she explained. As restrictions eased, she began offering catering for small gatherings, which quickly snowballed into larger opportunities for weddings and corporate events.

Not too far behind her success is Melinda Brown, who launched Nosh Boards Charleston in 2021. Having spent her life in the food service industry, she decided to blend her culinary skills with the appealing nature of charcuterie boards. “I was always that friend bringing the charcuterie to gatherings,” Brown recalled with a smile. She too capitalized on social media’s popularity with charcuterie and has since developed a range of options that include dessert boards and elaborate grazing tables. “I’ve probably made over 10,000 boards,” she said, showcasing her expertise!

A Personal Touch

Each board has its own flair and creativity, and it’s this variety that makes them so engaging. Kelsey Pettus from CHS Coastal Charcuterie noted, “Displaying a grazing table is not just serving food; it’s about creating an experience.” Offering options from vegan boards to brunch-themed setups, they cater to a diverse range of palates and preferences. Whether you’re hosting a cozy gathering or a wild bash, there’s a charcuterie option available.

The presentation of these boards serves not just a practical purpose, but an aesthetic one, too. “They’re not just convenient; they’re lovely to look at,” Brown observed. “Instead of a standard buffet line with pans of food, you have this beautiful array of goodies that draws people in.”

Creativity is Key

One of the best parts about charcuterie is how customizable it is. Every board can reflect the creator’s personality, which is why each one is unique. “To me, they are a mix of technique and style,” Brown explained. “You can test, explore, and find what works best for you. No two boards ever look identical.”

Despite the worry that the charcuterie trend might fizzle out, the continued popularity of these creative boards suggests otherwise. The adaptability and visual appeal make them a hit in various settings – from home dinner parties to high-profile events. Brown sums it up best: “Everybody loves a meat and cheese board!”
